Chicken Soup Recipe

Chicken soup, a tried and tested home remedy to ease a runny nose, coughing, and a sore throat, is celebrating a revival.

Ingredients (4 servings):

  • 1 stewing chicken
  • 2 servings of assorted vegetables (carrots, celery, leek, parsley)
  • 2 tablespoons of fat/oil
  • 2 tablespoons of salt
  • A pinch of pepper
  • (Add chili or ginger for spice and other herbs such as parsley and chives to taste)

Enjoy your soup with (wholewheat) noodles, fried batter pearls, or peas.

Add plenty of salt to water and boil chicken for about 1.5 hours. In the meantime, chop carrots, celery, and leek, and mince parsley.

Take chicken out of the broth, remove bones, and shred meat.

Fry vegetables in a pan and add chicken broth. Leave to simmer for about 30 minutes. Add meat and noodles, fried batter pearls, or peas to soup and season to taste.

Bon appétit!
